Pumpkin Bread

Using up canned pumpkin!


1/2 cup egg substitute
1 cup sugar substitute
1/4 cup olive oil
1/2 cup applesauce
6 ounces of canned pumpkin
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
cooking spray














Preheat oven to 375 degrees. Grease a loaf pan.

In electric mixer, combine eggs, sugar substitute, oil, applesauce, and pumpkin.














Separately combine flour, baking powder, baking soda, cinnamon, and salt.

Add dry ingredients to pumpkin mixture and stir.














Pour into prepared loaf pan. Bake for 1 hour.














Taste?

Even my step father loved it! Enough said : )

But I think it was drier than I expected. Maybe because of the whole wheat flour?
